Here another recipe from my gel Stephanie, she does love her Aussie cookbook. I love when she make this one.

Blackberry Puddings with Crème Anglaise (pg 129 Great Tastes: Desserts Bay Books, 2010)


  • 4 ½ oz unsalted butter, softened
  • Heaped ½ c. caster sugar [Domino superfine sugar]
  • 2 eggs, room temperature
  • 1 c. self-rising flour
  • 2 tbsp milk
  • 2 ¼ c. blackberries

Crème Anglaise

  • 11 fl oz milk
  • 4 egg yolks, room temperature
  • ⅓ c. caster sugar


  1. Preheat the oven to 350°F/Gas 4 and grease eight ½ cup dariole moulds.
  2. Using electric beaters, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Sift the flour and gently fold in with enough milk to form a dropping consistency.
  3. Cover the base of each mould with a layer of blackberries. Spoon enough of the pudding mixture over the berries so that the moulds are three quarters full. Cover the moulds with foil, sealing tightly. Place puddings in a roasting tin and pour in enough hot water to come halfway up the sides of the moulds. Bake for about 30-35 minutes, or until the puddings spring back when lightly touched.
  4. Meanwhile, to make the crème anglaise, heat the milk to just below boiling point, then set aside. Beat the egg yolks and sugar with electric beaters until thick and pale. Slowly whisk in the hot milk and pour the mixture into a saucepan. Cook over low heat, stirring constantly, for 5-7 minutes, or until the custard is thick enough to coat the back of a spoon. Remove from heat.
  5. To serve, unmold the puddings onto plates. Drizzle with the crème, or serve with pouring cream.


This makes a lot of crème anglaise. I recommend making half the crème recipe. I used my ramekins to make this, I don’t have dariole molds. This is very yummy. Enjoy.
