Good day everyone,

Today we head back to the VA again to talk about Denny’s medical issues, I would just like them to fix his shoulder and then figure out his disability. We were supposed to have our son’s B-day party tonight but we got a call last night about a mandatory parent meeting for girls softball. So I hope you all will come back tomorrow for my oldest son’s B-day post.

Cheap, Fast, and Good Recipe

My Beef and Barley Soup   pg 7      serves 4   under 1 hour

  • 1 can (14 oz) fat free chicken broth
  • 1 can (14 oz) fat free beef broth
  • 2 med carrots (~1 c. sliced)
  • 1 lg onion (~1 c. chopped)
  • 1 c. shredded beef roast (already cooked)
  • ½ c. med size pearl barley

1.)  Pour broths into a pot. Add 3 cups water and bring to a boil.

2.)  While it’s heating, slice the carrots adding as you go. Peel and chop onion, adding as go. Add the beef and barley.

3.)  When soup begins to boil, reduce heat to med-low. Simmer, covered, stirring occasionally to prevent sticking, until veg and barley are tender (~45 min).
